Ingredients

  • 2 lbs chicken boneless skinless breast or thigh
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika optional
  • 1 Tbs oil vegetable or olive oil
  • ¼ Cup chicken stock optional

Instructions

  1. Cut chicken into 1" squares on a cutting board.
  2. Sprinkle lightly with salt, pepper, garlic & onion powders and paprika. Set aside.
  3. In a skillet on the stovetop over medium to medium high heat, heat the oil to glistening and where a drop of water sizzles in the oil.
  4. Add the chicken pieces all at once and spread out into the pan. Allow space between the chicken pieces. Do not crowd the pan. If there isn't space between the chicken pieces, remove some and allow to rest on a plate and then work in batches.
  5. Cook the chicken until browned on one side slightly and then turn to brown on the other (about 2-3 minutes per side). The chicken is done when it is cooked through and no pink remains and the internal temp is 165. If you had to reserve some of the chicken, completely cook this batch before starting a new batch. If the chicken isn't cooking quickly enough, dribble some of the chicken stock (2 teaspoon at a time) onto the hot skillet and immediately place a lid on the skillet allowing the chicken to steam a bit to cook more quickly).

Notes

  • The best way to cook chicken very well is to Be sure to lay the chicken in a single layer in the pan and allow space between the pieces. 
  • To steam the chicken meat a bit while it is cooking, splash with some chicken broth.
  • For juicy chicken cook slowly and don't overcook, simply cook until an instant-read thermometer says 165 and then remove from the heat. 
  • For a complete meal, consider cauliflower rice, stir fry, zucchini noodles or white rice. 
  • Cut into smaller pieces for a quicker cooking chicken pieces.
  • Always wash work surfaces to avoid food poisoning. 
  • Use leftover chicken for tacos, BBQ sauce or on salads!
