  • 1 pumpkin medium pie pumpkin size

Instructions

  1. Remove stem.
  2. Cut pumpkin in half.
  3. Place on rimmed baking sheet, cut side down.
  4. Roast in 350°F oven for 30-45 minutes, depending on size of pumpkin. Test with fork, if pumpkin meat is soft. Pumpkin is done.
  5. Allow to cool. Scoop out flesh with spoon.
  6. Store 2 cups in freezer bags.

  • Cooked pumpkin can be canned in pressure canner.
  • Store in freezer bags in 2 cup portions for use in most recipes for up to 6 months.
