How to Make a Rossini Cocktail (Strawberry Bellini)

The bubbly rossini cocktail is your new favorite brunch drink! Made with strawberry puree and sparkling wine, it's perfect for summer entertaining!

Ingredients

  • 8 fresh strawberries plus extra for garnish
  • 2 teaspoons granulated sugar optional, adjust based on sweetness of strawberries
  • 1 teaspoon fresh lemon juice
  • 1 cup sparkling white wine or chilled Prosecco or champagne

Instructions

Prepare the Strawberry Puree

  1. Rinse and hull the strawberries.
  2. In a blender, combine the strawberries, sugar, and lemon juice. Blend until smooth.
  3. Strain through a fine mesh sieve for a smoother texture (optional).
Assemble the Cocktails
  1. Evenly divide the strawberry puree between two champagne flutes.
  2. Carefully pour the chilled sparkling wine over the puree in each flute, allowing the fizz to settle before topping off to avoid overflow.
Garnish and Serve
  1. Stir the cocktails gently to mix the puree and wine. Garnish each glass with a whole or sliced strawberry on the rim.
  2. Serve immediately.

  • Chill your champagne flutes before serving to keep the cocktail cool longer.
  • Adjust the sweetness of the puree according to the natural sweetness of your strawberries and your preference.
