Prepare the Strawberry Puree
- Rinse and hull the strawberries.
- In a blender, combine the strawberries, sugar, and lemon juice. Blend until smooth.
- Strain through a fine mesh sieve for a smoother texture (optional).
Assemble the Cocktails
- Evenly divide the strawberry puree between two champagne flutes.
- Carefully pour the chilled sparkling wine over the puree in each flute, allowing the fizz to settle before topping off to avoid overflow.
Garnish and Serve
- Stir the cocktails gently to mix the puree and wine. Garnish each glass with a whole or sliced strawberry on the rim.
- Serve immediately.
