How to Make Marinated Mushrooms

Ingredients

  • 8-12 oz white button mushrooms
  • ¼ cup white vinegar
  • 2-3 cloves garlic (peeled and minced)
  • ½-¾ tsp sugar
  • ½ tsp salt
  • ½ tsp dried basil
  • ¼ tsp dried thyme
  • ¼ tsp dried oregano
  • ¼ tsp black pepper
  • ¼-½ tsp red pepper flakes (to taste)
  • 1 cup diced red bell pepper
  • ¼ cup extra virgin olive oil
OPTIONAL EXTRA
  • ½ tsp Mrs. Dash Italian Medley (optional but delicious!)

Instructions

  1. Keep smaller mushrooms whole or slice larger mushrooms into quarters.
  2. Add to a medium pot along with vinegar, garlic, sugar, salt, and spices (basil, thyme, oregano, black pepper, and red pepper flakes along with optional Italian Medley)
  3. Bring to a simmer and cook for 4-5 minutes, stirring occasionally.
  4. Transfer to a heat-safe bowl or jar and stir in bell pepper and olive oil. Allow to cool slightly then add lid and place in the refrigerator to continue marinating in the fridge overnight.
  5. Enjoy cool or at room temperature - whichever floats your boat! It's going to take every ounce of self control you have not to devour them early, but trust me, they are 100% worth the wait. Serve plated with toothpicks because food is always more fun on a stick!
