Description
To create vanilla extract, 12 vanilla beans of the Tahitian variety are placed into a 16-ounce swing-top glass bottle or divided between two smaller bottles. These beans are then covered with 80+ proof unflavored rum or vodka, leaving some space at the top. After sealing, the mixture is stored to infuse for a minimum of six months, with occasional shaking every two to three weeks to help release the vanilla flavor compounds.
As the beans steep, their flavor melds into the alcohol, yielding a home-extracted vanilla essence that can replace commercial extracts. This method requires patience but results in a distinctive and fresh vanilla flavor from the whole bean pods. The use of a clear or neutral spirit allows the vanilla flavor to shine without added alcohol flavor interference.

Instructions
- Place vanilla beans in one 16-ounce swing-top glass bottle (or you can divide the beans between 2 8-ounce bottles)
- Fill the bottle with rum or vodka, giving an inch or two clearance at the top. Seal and allow to infuse for at least 6 months, shaking every 2-3 weeks (or so) before using.
