Ingredients

  • 20 ounces frozen cauliflower
  • 2 cloves minced garlic 
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 medium lemon zest and juice
  • 1/2 cup shredded sharp cheddar cheese

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Place the frozen cauliflower in a sealable bag or mixing bowl. Add minced garlic, olive oil, salt, and pepper. Toss until the cauliflower is evenly coated.
  3. Transfer the coated cauliflower to a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 15-20 minutes, or until the cauliflower is slightly browned and tender-crisp.
  5. If using, drizzle the cooked cauliflower with lemon juice, then sprinkle lemon zest and grated sharp cheese on top.
