How To Roast Caulilini Baby Cauliflower

This recipe shows how to roast caulilini baby cauliflower simply with olive oil, salt, and pepper. The process enhances the vegetable’s natural flavor and caramelizes the edges for a tender inside with a bit of crispness outside. Roasting until lightly charred intensifies the nutty, slightly sweet taste, making it a straightforward side dish or snack.

Ingredients

  • 12 ounces baby cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

    Cup of Yum
  1. Preheat oven to 400 degrees F.
  2. On a rimmed baking sheet add baby cauliflower.
  3. Drizzle baby cauliflower with olive oil, kosher salt, and black pepper.
  4. Toss to combine and spread out baby cauliflower so it's not overlapping.
  5. Roast for about 10-15 minutes or until you have reached your desired doneness. I like to roast mine closer to 15 minutes as it gives me some darker brown char on the ends of the baby cauliflower.
