Huevos con Salchicha (Eggs and Hot Dog Scramble)
Huevos con Salchicha, a simple breakfast scramble of sliced hot dogs and eggs, that is a favorite among kids, and great for adults too, especially topped with spicy salsa.

Ingredients
- 1 hot dog
- 1-2 eggs
- ½ tablespoon oil
- salt to taste
Instructions
- Slice hot dog into ¼″ thick pieces. Sauté the slices in a hot pan with oil over medium heat until golden on all sides.
- While the hot dog slices are browning, whisk one to two eggs in a separate bowl. Add salt and beat the eggs until the whites and yolks are well incorporated.
- Lower the heat to medium-low and pour the eggs over the hot dogs.
- Stir the eggs and the hot dogs together until the eggs are cooked to your liking.
- Check for salt and adjust seasoning as needed.

- Variations
- Sprinkle grated cheese over the eggs right at the end
- Sauté the hot dogs with diced onion and diced jalapeño
- Top with salsa, like this jalapeño one or this salsa verde
- Serve with a side of refried beans and with flour tortillas
