Hummus Crusted chicken

Ingredients
- 4 (6 ounce) chicken breast boneless, skinless
- salt and pepper to taste
- 1 cup hummus
- ½ teaspoon cumin
- ½ teaspoon paprika
- cooking spray
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Pat chicken breast dry and season with salt and pepper. In a medium bowl, combine the hummus and spices together. Rub the mixture evenly all over the chicken breasts on both sides.
- Place the hummus covered chicken on the prepared sheet pan and bake for 15-20 minutes or until a thermometer reads 160° F internal temperature. Then broil it for 1-2 minutes, watching it carefully so it doesn't burn.
- Sprinkle fresh parsley and serve with a side of couscous and veggies, if desired.
