Hummus Cucumber Boats

Ingredients

  • 1 English cucumber
  • ½ cup hummus any flavor!, brand Sabra
  • ⅓ cup tomato chopped
  • 2 TBSP feta cheese crumbled

Instructions

  1. Slice off the ends of your English cucumbers (also sometimes called hothouse cucumbers) and finely dice the ends.
  2. Slice the cucumber in half vertically, then in half horizontally.
  3. Run a mellon baller or spoon along the center to scoop out the seeds and make some space for the hummus.
  4. Spread hummus down the center of the cukes and top with chopped tomato, cucumber, and feta.

Notes

  • Sabra’s roasted red pepper and roasted garlic hummus flavors work well for these cucumber boats, but feel free to use any favorite hummus variety.
