Hummus Cucumber Boats
Hummus Cucumber Boats offer a crisp cucumber base hollowed out and filled with creamy hummus, topped with chopped tomato and crumbled feta. This fresh and light snack or lunch option pairs the cool crunch of cucumber with the rich texture of hummus and the slight tang of feta cheese, making it a refreshing dish with Mediterranean flair.
Ingredients
- 1 English cucumber
- ½ cup hummus any flavor!, brand Sabra
- ⅓ cup tomato chopped
- 2 TBSP feta cheese crumbled
Instructions
- Slice off the ends of your English cucumbers (also sometimes called hothouse cucumbers) and finely dice the ends.
- Slice the cucumber in half vertically, then in half horizontally.
- Run a mellon baller or spoon along the center to scoop out the seeds and make some space for the hummus.
- Spread hummus down the center of the cukes and top with chopped tomato, cucumber, and feta.
- Load up your lunchbox with all your favorite mix-ins and check out the blog post for more lunch ideas and recipes! Woot!
Notes
- Sabra’s roasted red pepper and roasted garlic hummus flavors work well for these cucumber boats, but feel free to use any favorite hummus variety.
- For a taco-inspired variation, use spicy or taco-flavored hummus topped with grated cheese, lettuce, and tomato, served with tortilla chips.
- Dice the cucumber ends finely and save for salads or snacking to minimize waste.
