Description
This recipe transforms English cucumbers into scooped-out vessels for a flavorful filling. After trimming and dicing the cucumber ends, the cucumbers are halved vertically and then in half horizontally. - 1 English cucumber
- ½ cup hummus any flavor!, brand Sabra
- ⅓ cup tomato chopped
- 2 TBSP feta cheese crumbled
Instructions
- Slice off the ends of your English cucumbers (also sometimes called hothouse cucumbers) and finely dice the ends.
- Slice the cucumber in half vertically, then in half horizontally.
- Run a mellon baller or spoon along the center to scoop out the seeds and make some space for the hummus.
- Spread hummus down the center of the cukes and top with chopped tomato, cucumber, and feta.
