Hummus (Oil-Free!)
This oil-free hummus uses canned garbanzo beans, aquafaba from the can, lemon juice, tahini, garlic, and cumin to create a smooth, creamy dip without olive oil. Aquafaba adds body and helps achieve a fluffy texture, while tahini provides richness. The blended ingredients yield a bright, nutty spread that can be customized with toppings or flavor variations.
Ingredients
- 15 oz. garbanzo beans canned
- 1/4 cup aquafaba or less
- 1/4 cup lemon juice about 1 1/2 lemons, fresh
- 2 Tbsp. tahini (or up to 4 Tbsp.)
- 1 clove garlic
- 2-3 tsp. coconut aminos (optional, but recommended)
- 1/2 tsp. cumin ground
- 1/4 tsp. salt
Instructions
- Open the can of garbanzo beans and reserve 1/4 cup aquafaba.* Then rinse and drain garbanzo beans.
- Add all ingredients to a high-speed blender or food processor. (Start with 1 Tbsp. aquafaba and add more if desired.) Blend for about 1 minute, or until creamy.
- Taste and adjust flavors if desired. Add more tahini for a thicker texture. Store leftovers in a sealed container in the refrigerator.
