Hummus Pasta with Chicken

This simple creamy Hummus Pasta with Chicken is so quick to make and makes for the perfect meal prep or easy recipe for beginners.

Ingredients

  • 10 oz Fettuccine pasta or pasta of choice
  • 1-2 tbsp olive oil
  • 1 onion sliced
  • 3 cloves garlic minced
  • 2 cups spinach
  • 1 tsp salt
  • 1 cup hummus
  • 2 cups shredded chicken
  • 1 lemon juiced and zested
  • 1 handful basil
  • red pepper flakes + parmesan for topping

Instructions

  1. Cook your pasta according to the directions on the packaging, reserving some pasta water.
  2. In a pot or pan on medium heat, add olive oil and saute onion until soften and add in the mince garlic and saute for a minute.
  3. Add in spinach and salt and saute until wilted.
  4. Deglaze the pot with the lemon juice and zest.
  5. Add in the hummus and ½ cup pasta water, mix until the sauce is smooth. Add more pasta water if you want a less thick sauce.
  6. Add in the cooked pasta and shredded chicken and toss to coat.
  7. Add in a handful of basil and stir until it’s mixed in.
  8. Top with some red pepper flakes and parmesan.
