Ingredients
- 10 oz Fettuccine pasta or pasta of choice
- 1-2 tbsp olive oil
- 1 onion sliced
- 3 cloves garlic minced
- 2 cups spinach
- 1 tsp salt
- 1 cup hummus
- 2 cups shredded chicken
- 1 lemon juiced and zested
- 1 handful basil
- red pepper flakes + parmesan for topping
Instructions
- Cook your pasta according to the directions on the packaging, reserving some pasta water.
- In a pot or pan on medium heat, add olive oil and saute onion until soften and add in the mince garlic and saute for a minute.
- Add in spinach and salt and saute until wilted.
- Deglaze the pot with the lemon juice and zest.
- Add in the hummus and ½ cup pasta water, mix until the sauce is smooth. Add more pasta water if you want a less thick sauce.
- Add in the cooked pasta and shredded chicken and toss to coat.
- Add in a handful of basil and stir until it’s mixed in.
- Top with some red pepper flakes and parmesan.
