Hummus Pizza with Greek Tapenade

Ingredients

  • 1 large pita (white or whole wheat)
  • 8 ounces hummus (store-bought or homemade)
  • toasted pine nuts (optional garnish)
Greek Tapenade
  • 2 roma tomatoes (seeded and minced)
  • ⅓ cup red onion (minced)
  • ¼ cup kalamata olives (minced)
  • 4 ounces feta cheese (crumbled)
  • ¼ cup parsley (minced)
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • salt and pepper (to taste)

Instructions

  1. Place pita on a large plate or platter and spread evenly with hummus.
  2. In a small bowl, mix together the Greek tapenade. Check for seasoning and adjust accordingly before spreading on top of the hummus and pita pizza. Use a pizza wheel to slice into wedges before serving.
