Indian Mint Sauce

Indian Mint Sauce blends fresh mint and coriander leaves with green chili, ground spices, and thick Greek yoghurt to create a creamy sauce with a cooling yet lightly spiced character. The sauce is designed to complement rich or spicy dishes, offering a fresh herbal flavor balanced by yogurt’s creaminess and a subtle tang from optional lemon juice.

Ingredients

  • 2 tablespoons mint heaped tablespoons, leaves
  • 2 tablespoons Coriander leaves heaped tablespoons
  • 1 small green chilli chopped
  • 2 tablespoons water if the yoghurt used is not that thick, use one tablespoon of water
  • 1 queeze lemon juice or lime juice, about 1 teaspoon, optional
  • ¼ teaspoon cumin
  • ¼ teaspoon garam masala
  • ½ teaspoon sugar
  • salt as a guide, we add about ½ teaspoon, to taste
  • 8 tablespoons Greek yoghurt or other plain, thick, full fat yoghurt, full fat

Instructions

  1. In a small chopper, grinder or mortar and pestle, combine the mint leaves, coriander leaves, chopped green chilli, water and a squeeze of lemon juice.
  2. Blend or grind the ingredients until they form a fine pulp.
  3. Transfer the mint pulp to a small bowl and add the ground cumin, garam masala, sugar and salt. Give it a quick stir.
  4. Add the mint mixture to the yoghurt. Stir until everything is well combined. Place the sauce in the fridge for at least 30 minutes before serving.
  5. Garnish with some fresh mint leaves if you wish.

Notes

  • Always use fresh mint and coriander for authentic flavor and a good texture.
  • Add ground cumin and garam masala sparingly to keep mint flavor prominent with a subtle spice kick.
  • Use thick Greek yoghurt to create a scoopable sauce rather than a runny dip.
  • Add yoghurt last to maintain sauce thickness and chill before serving for best flavor.
  • Adjust the green chili amount to control heat level according to your preference.
