Ingredients

  • 2 pounds carrots
  • 3 cloves garlic , minced
  • 1 tablespoon ginger paste , or minced
  • 1 tablespoon garam masala
  • 1 teaspoon kosher salt
  • 2 tablespoons vegetable oil
  • 2 tablespoon unsalted butter , melted
  • 1/4 cup honey

Instructions

  1. Preheat oven to 375 degrees.
  2. Peel and cut carrots into 1 inch chunks.
  3. In a large bowl add carrots, garlic, ginger, garam masala, salt, vegetable oil, and melted butter, tossing well.
  4. Put carrots on a cookie sheet in a single layer and roast for 25 minutes, or until slightly browned.
  5. Remove from oven and immediately toss with honey.
