Loaded in flavor as some turmeric for it’s anti-inflammatory properties, this Indian spiced zucchini and tomatoes dish will not disappoint your taste buds.

Ingredients
- 1 medium onion (diced)
- 2 tbs ginger (minced or grated)
- ¼ tsp red chili flakes
- 2 cloves garlic (grated)
- 1 tbs cumin
- ½ tbs Turmeric
- 1 tsp Coriander
- ½ tsp sea salt
- 1 large zucchini (or 2 medium zucchini – cut large dice)
- 2 tomatoes (diced)
- ¼ c fresh cilantro (for garnish)
- ¼ c PLAIN yogurt (for garnish optional)
Instructions
- Spray medium sauce pan with non-stick cooking spray and sautee onions, ginger and chili flakes for 3-4 minutes or until onions become tender.
- Add garlic, cumin, tumeric, coriander and salt – cook additional 60 seconds.
- Stir in zucchini and sautee 2 minutes.
- Add tomatoes, stir and bring to simmer.
- Cover and let cook for 15-20 minutes or until squash is tender.
- Garnish with fresh cilantro and plain yogurt if you wish.
