Individual Peanut Butter Oatmeal Cups
These Individual Peanut Butter Oatmeal Cups are thick textured, lightly sweet baked oatmeal treats with cinnamon and a hint of salt. Each cup includes oats, natural peanut butter, maple syrup, and plant-based milk, combined into a batter that's moist yet firm after baking. Adding walnuts, blueberries, or vegan chocolate chips provides contrasting textures and flavors. Baked in cupcake liners or greased pans, they develop a slightly crispy top, making them handy for breakfast or snacks.
Ingredients
- 1 cup oats + more to top
- 1 teaspoon cinnamon
- salt dash
- ½ teaspoon baking powder
- ½ cup unsweetened plant-based milk
- 2 tablespoons maple syrup
- 3 tablespoons peanut butter natural, of
- ¼ cup walnuts blueberries, or vegan chocolate chips
Instructions
- Preheat the oven to 350 degrees F. Combine oats, cinnamon, salt and baking powder in a medium bowl.
- Add plant-based milk, maple syrup, and peanut butter (*add more or less plant-based milk until a very thick liquid batter is formed.)
- Fold in nuts, fruit, or vegan chocolate chips.
- Place 5 to 6 cupcake liners in a pan and with equal amounts of batter (if not using liners, just ensure the cupcake pan is greased). Place in the oven for 15 to 20min. Cups should be moist but firm with a crispy top.
- Remove from the oven, let cool until warm, and top with vegan butter, peanut butter or have them plain.
Notes
- Use cupcake liners or grease the pan well to prevent sticking during baking.
- Serve plain or topped with vegan butter or extra peanut butter for added richness.
- Separate batter into small bowls to create different flavor variations using nuts, berries, or vegan chocolate chips.
