Insanely Good Homemade Granola

Insanely Good Homemade Granola is a sweet and savory granola with oats, nuts, seeds, dried fruit mixed together with a cinnamon seasoning and combined with a peanut butter and maple syrup poured over top, then baked to perfection. This is a MUST make granola in 20 minutes!

Ingredients

  • 4 cups old fashioned oats
  • 1 cup sliced almonds
  • 1 cups shelled pumpkin seeds pepitas
  • 1/2 cup shredded coconut
  • 2 Tablespoons cinnamon
  • 1 teaspoon salt
  • 1/2 cup olive oil or coconut oil
  • 1/2 cup maple syrup can use honey
  • 1/4 cup peanut butter
  • 1/2 cup dried cranberries

Instructions

  1. Preheat oven to 350 degrees and line a sheet pan with parchment paper. In medium sized bowl combine the oats, sliced almonds, pumpkin seeds, coconut, cinnamon and salt.
  2. In small bowl whisk the oil, maple syrup, and peanut butter. Pour over the oat mixture and mix until incorporated.
  3. Spread evenly on the sheet pan. Bake for 20-25 minutes mixing once halfway through until golden brown.
