- 3 to 4 large artichokes
For Serving:
- mayonnaise
- Parmesan Cheese grated
- fresh parsley chopped
- Lemon wedges
Instructions
- Use a sharp knife to cut the top inch off each artichoke. Similarly, chop the stem off. Use kitchen scissors to trim the pointy leaves.
- Pour 1 cup of water into your Instant Pot (or pressure cooker) and insert the wire rack.
- Place artichokes on the wire rack. Seal the lid and press the Pressure Cook button. Set the timer for 15 minutes for medium-sized artichokes or 25 minutes for large. Keep the steam vent sealed.
- Once the pressure cooker has run its course, use the quick release to let out the steam. Open the lid and remove the artichokes.
- Serve artichokes with your favorite dipping sauce.
