Ingredients

  • 4-5 pound chuck roast
  • 2 tablespoons vegetable oil
  • 2 teaspoons kosher salt
  • 1 teaspoon coarse ground black pepper
  • 2 cups beef broth
  • 4 prigs fresh thyme , or 1 teaspoon dried
  • 2 cloves , garlic minced
  • 1 yellow onion , diced
  • 1 pound carrots , peeled and cut into 2 inch chunks
  • 6 Yukon gold potatoes , peeled and cut into large chunks

  1. Start by seasoning the chuck roast with salt and pepper.
  2. Set your pressure cooker to sauté and heat up your vegetable oil.
  3. Once it’s hot, sear the roast until it is deeply brown on both sides.
  4. Pour in the beef broth, thyme, garlic, and onions put on the lid, and set it to cook on high pressure for 45 minutes.
  5. Release the pressure naturally for 10 minutes then add in the potatoes and carrots (and any other vegetables of your choosing) and cook on high pressure for 15 minutes.
  6. Release pressure naturally for 10 minutes then remove the lid and serve.
