Instant Pot Beets

Here’s how to cook beets in the Instant Pot perfectly every time! These Instant Pot beets are so easy and come together in about 20 minutes, which is less than half the time of cooking beets in the oven.

Ingredients

  • 4-6 medium beets
  • 1 cup water

  1. Trim beets and discard the roots and stems. I highly recommend saving the beet greens for another recipe! Wash well, making sure to scrub off any residual dirt.
  2. Place a rack into the bottom of your Instant Pot and add 1 cup water into the pot. Place beets on the rack in a single layer, cover with the lid and set the valve to the “sealing” position.
  3. Pressure cook on high pressure for 12-18 minutes, depending on the size of the beets. Release pressure manually by carefully moving the valve to the “venting” position.
  4. Check to make sure the beets are done by inserting a knife into the center. If it goes in easily, the beets are done. If you’re met with some resistance you can place the cover back on the Instant Pot and cook on high pressure for another 1-2 minutes or until the beets are tender.
  5. Let beets cool, peel the skin off and chop or use in recipes as desired.
