Ingredients

  • 1 lb. black beans dried
  • 4 cups water
  • 2 cups chicken broth or vegetable, reduced sodium*
  • 2 tsp. salt

Instructions

    Cup of Yum
  1. Sort beans to remove any rocks or twigs then rinse in a fine mesh strainer or colander under cool running water.
  2. Add the beans, water, broth, and salt to a 6-quart Instant Pot. Ensure the pressure release valve is sealed.
  3. Using the manual function, set the Instant Pot to high pressure and the timer to 30 minutes. It will take about 10 minutes for the Instant Pot to fully pressurize before the timer starts counting down.
  4. Once the time is up, allow a 20-minute natural pressure release before releasing the pressure valve and opening the lid.
  5. Serve as is for a side dish or use a slotted spoon to remove the beans from the liquid and use in your favorite recipes. Enjoy!

Notes

  • One serving size = 1/2 cup of cooked beans.
  • Can also use water in place of the broth.

  • How to store: Place leftover black beans in an airtight container in the fridge for up to 4 to 5 days.
  • How to freeze: Seal black beans in a freezer-safe container or freezer bag and keep for up to 3 months.
  • How to reheat: You can warm these back up in a skillet on the stovetop over medium-low heat or use the microwave.
