Ingredients

  • 2 tablespoons vegetable oil
  • 2 pounds chicken thighs
  • 1 yellow onion , diced
  • 3 cloves garlic , minced
  • 1 teaspoon kosher salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon coarse ground black pepper
  • 2 bay leaves
  • 3 cups white rice
  • 4 cups chicken broth

Instructions

  1. Add vegetable oil to your instant pot on sauté setting.
  2. Add the chicken thighs and sear on all sides, about5-6 minutes.
  3. Add in the onion and stir well, cooking for 5-6 minutes or until translucent.
  4. Add in the garlic, salt, oregano, basil, black pepper, and bay leaves and stir well.
  5. Add the rice over the mixture and pour the chicken broth over the rice (don't stir).
  6. Close, lock lid, and seal the vent.
  7. Cook on high for 10 minutes, then quick release the pressure.
