Ingredients

  • 1 lb chicken breast boneless skinless
  • 1 can black beans rinsed and drained
  • 14 ounce can diced tomatoes fire roasted
  • 10 ounces Red Enchilada Sauce
  • 1 medium onion chopped
  • 4 ounces green chili chopped
  • 2 cloves garlic minced
  • 2 cups water
  • 16 ounces chicken broth lower sodium or vegetable broth
  • 1 teaspoon cumin may add more if you want a spicier soup
  • 1 teaspoon chili powder may add more if you want a spicier soup
  • ⅛ teaspoon black pepper
  • 1-2 bay leaf
  • 1 cup corn frozen
  • 1 TBS cilantro chopped
  • ½ cup mozzarella cheese part skim, shredded
  • lime for garnish
