Instant Pot Cilantro Lime Rice
This Instant Pot Cilantro Lime Rice uses long grain white rice cooked with vegetable broth, water, and canola oil for moisture and flavor. After pressure cooking, fresh lime juice, zest, chopped cilantro, and a touch of salt are folded in to brighten the rice with citrus notes and herbal freshness. The resulting rice is fluffy with a subtle tang, making it a well-rounded side dish suitable for Mexican, Southwestern, or other fresh-flavored meals.
