Instant Pot Corned Beef and Cabbage

Instant Pot Corned Beef and Cabbage is quick and easy in the pressure cooker. Enjoy this traditional corned beef instant pot recipe with very little work.

Ingredients

  • 4 lbs corned beef brisket
  • 3 carrots peeled and cut into large chunks
  • 1 lb small yellow potatoes halved
  • 1/2 head green cabbage cut into wedges
  • 3 cups water
  • 4 tablespoons butter
  • 2 teaspoon minced garlic 
  • 1 tablespoon chopped parsley
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • grainy mustard for serving optional

Instructions

  1. Remove the corned beef from the package.
  2. Place the corned beef brisket (fat side up), carrots and potatoes in a Instant pot. Add 3 cups of water to the Instant pot, plus the seasoning packet that comes in the corned beef package.
  3. Cover and set the valve to sealing.
  4. Cook on high pressure for 90 minutes.
  5. Do a quick release to remove the pressure.
  6. Remove the lid and Add the cabbage on top of the corned beef.
  7. Add the lid back on and set the valve to sealing.
  8. Set the pressure for 4 minutes. when finished do a quick release.
  9. Remove the cabbage, corned beef, potatoes and carrots from the slow cooker. Slice the corned beef against the grain or shred.
  10. Place the butter, garlic, parsley and salt and pepper in a small bowl. Microwave in 30 second increments or until melted.
  11. Drizzle the garlic butter over the carrots, potatoes and cabbage. Place the meat, potatoes and vegetables on a platter and serve with mustard on the side if desired.
