Learn how to make perfect French Onion Soup in the Instant Pot. Cozy, hearty and flavorful onion soup is topped with melted cheese and a crusty sourdough crouton in this easy recipe!

Ingredients
- 3 Tablespoons unsalted butter
- 2 Tablespoons olive oil
- 8 to 10 medium red onions sliced
- 1 Tablespoon honey
- 1 teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- ¼ cup red wine
- 4 cups beef broth
- 6 slices sourdough bread slices
- 1 ½ cups grated Swiss Cheese
- fresh thyme for garnish, optional

Instructions
- Slice onions into thin slices.
- Select "SAUTE" mode on the Instant Pot. Add butter and oil. Heat until butter is melted, then add the onion slices and honey. Cook for about 20 minutes until onions are golden brown and caramelized.
- Add spices, wine, and beef broth. With a wooden spoon, scrape the bottom of the pot to deglaze the pan (removing any bits and pieces that are stuck).
- Turn off saute mode. Place lid on Instant Pot. Selece Manual "HIGH PRESSURE" and make sure the valve on top is set to SEALING. Set cook time for 5 minutes.
- Once cook time has ended do a quick release of pressure immediately by turning the valve on top to VENTING.
- Open the lid carefully and ladle soup into 4-6 oven safe bowls.
- Top each bowl with a slice of bread and grated swiss cheese.
- Place soup under broiler for about 5 minutes, until cheese is melted and lightly browned.
- Remove from oven and serve hot with a garnish of fresh thyme, if desired.
Notes
- You could also use vidalia onions, but they are usually more expensive.
- Honey is used to sweeten the onion and help caramelize the onions quicker.
- Red wine gives a deeper flavor, but can be omitted if preferred. Brandy can also be used instead of the red wine.
- Choose a low sodium beef broth to keep the salt levels lower. You can always season the soup prior to serving.
- Store soup in airtight container in the refrigerator for up to 4 days. Reheat in oven at 350 degrees for 15-20 minutes. You could also reheat on the stove top.
