Instant Pot Hawaiian Pork

You’re going to love this delicious and easy Instant Pot — Hawaiian pork entree. This is one of my favorite ways to make a healthier version of stir fry. Yum!

Ingredients

  • 20 oz pineapple chunks in pineapple juice
  • 2 tbsp. water
  • 1 tbsp. cornstarch
  • 3 tbsp. honey
  • 2 tablespoons soy sauce
  • 2 tbsp. brown sugar
  • 1 tbsp. minced ginger
  • 3 minced garlic 
  • 2 tbsp olive oil separated
  • 1 onion chopped
  • 1 red pepper chopped
  • 2 lb boneless pork loin
  • Parsley for garnishing

Instructions

  1. In two small bowls separate the pineapple chunks and the juice.
  2. Add water, cornstarch, honey, soy sauce, brown sugar, ginger and garlic in the small bowl with the pineapple juice.
  3. Stir until combined.
  4. Set to the side.
  5. Turn the Instant Pot to saute mode.
  6. Add the olive oil.
  7. Add onion and red peppers and pork, saute until the pork is no longer pink.
  8. Add pineapple chunks.
  9. Stir to combine.
  10. Add the pineapple sauce.
  11. Stir to combine.
  12. Secure the lid to the instant pot and select manual high, and cook for 10 minutes.
  13. Let pressure natural release for 7 minutes.
  14. Turn the valve to vent.
  15. Serve over rice.
  16. Garnish with fresh chopped parsley.
