Ingredients

Cake Ingredients
  • 2 cups flour
  • 2 cups water
  • 1 cup butter softened
  • 1 cup sugar
  • ½ cup buttermilk
  • 2 eggs large
  • 2 teaspoons pure vanilla extract
  • 2 teaspoons baking powder
Mango Glaze ingredients
  • 1/2 cup chopped mango pureed
  • 2 cups powdered sugar
  • 2-4 Tablespoons coconut milk

Instructions

For the Cake

  1. Combine flour and baking powder in a large mixing bowl.
  2. In a separate mixing bowl, mix softened butter and sugar, then add the whisked egg and vanilla extract.
  3. Slowly pour bowl of dry ingredients into the bowl of wet ingredients, while stirring constantly.
  4. Add milk and continue stirring.
  5. Coat the inside of bundt pan with non-stick baking spray and pour cake batter into pan.
  6. Pour water into the Instant Pot and set trivet in place.
  7. Cover the bundt pan with foil and place it on the trivet.
  8. Close the lid and cook at high pressure for 30 minutes.
  9. Once done cooking, allow for a natural steam release.
  10. Let the cake cool, then remove it from the bundt pan and transfer onto a wire rack.
For the Mango Glaze:
  1. In a large mixing bowl, whisk together all ingredients until combined. The mixture should be smooth in texture and thick.
  2. If the glaze is still lumpy, mix in another Tablespoon of milk. If the glaze is overly runny, mix in another 1/4 cup powdered sugar.
  3. Slowly pour the glaze evenly over the bundt cake and allow it to set for 30 minutes.
