Ingredients
- 2.5 lbs pork tenderloin
- 2 tablespoons olive oil
- 1 teaspoon minced garlic (2 to 3 cloves)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup maple syrup
- 1/3 cup orange juice
- 1/4 cup brown sugar
- 2 tablespoons tomato paste
Instructions
- In a medium bowl, whisk together the syrup, orange juice, brown sugar, and tomato paste. Set the bowl aside to prepare the pork.
- Add the olive oil and pork to the pot. Using the saute feature, lightly braise each side of the pork. Add in the minced garlic, salt and pepper, and continue to saute for about a minute. Turn off the saute feature.
- Pour the prepared liquid mixture over the pork, and spoon the liquids over the meat.
- Close and lock the lid. Turn the valve to sealing. Cook on high pressure for 5 minutes, then leave the pot for the natural release of steam, for an additional 15 minutes. Turn the valve to release the remaining steam. Carefully remove the lid and gently stir juices and spoon over the cooked pork.
- Remove the pork from the juices, and place on a large plate to slice and serve.

To Make The Maple Sauce
- Ladle one cup of the juices remaining in the pot and place in a small bowl.
- Add in three Tablespoons of all-purpose flour and whisk together. Season to taste.
- Serve as a side sauce or lightly drizzled over the pork before serving.

Notes
- Be sure you are using pork tenderloin and not a pork loin. If you are using a pork loin, you will have to cook it longer. The recipe is for pork tenderloin.
- If your pork tenderloin is frozen, you can still cook it in the Instant Pot. Skip the sauté step, and pressure cook for about 12 minutes, and let it naturally release for another 15 minutes.
