Ingredients
- 4-5 sweet potatoes
- 1 cup half and half
- 2 tbsp. diced chipotle chiles in adobo sauce
- 1/4 cup organic maple syrup
- 1/2 stick unsalted butter
- Salt and pepper dash
- 1 Tsp. paprika
- 1/2 Tsp. all spice
- fresh thyme
Instructions
- Wash your sweet potatoes.
- Add 1 cup of water to the instant pot and place the trivet in the pot.
- Put the sweet potatoes in the pot.
- Cook on high pressure for 15 minutes.
- Allow to naturally release and then open the pot.
- Once cool, remove the skins.
- Switch your Instant Pot to saute'
- Add the butter to the instant pot, with the half and half, chipotle pepper's, seasonings, and maple syrup.
- Stir to combine
- Add your sweet potatoes back into the pot.
- Mash by hand with a potato masher, or a immersion blender.
- Garnish and enjoy!
