Instant Pot Mashed Sweet Potatoes

Ingredients

  • 4-5 sweet potatoes
  • 1 cup half and half
  • 2 tbsp. diced chipotle chiles in adobo sauce
  • 1/4 cup organic maple syrup
  • 1/2 stick unsalted butter
  • Salt and pepper dash
  • 1 Tsp. paprika
  • 1/2 Tsp. all spice
  • fresh thyme

Instructions

  1. Wash your sweet potatoes.
  2. Add 1 cup of water to the instant pot and place the trivet in the pot.
  3. Put the sweet potatoes in the pot.
  4. Cook on high pressure for 15 minutes.
  5. Allow to naturally release and then open the pot.
  6. Once cool, remove the skins.
  7. Switch your Instant Pot to saute'
  8. Add the butter to the instant pot, with the half and half, chipotle pepper's, seasonings, and maple syrup.
  9. Stir to combine
  10. Add your sweet potatoes back into the pot.
  11. Mash by hand with a potato masher, or a immersion blender.
  12. Garnish and enjoy!
