Instant Pot Potato Soup

Delicious and creamy soup made in the pressure cooker.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices Bacon
  • 2 leeks
  • 2 cloves garlic
  • 3 cups yellow potatoes cubed
  • 4 cups broth or water
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • 1/2 cup cream
  • 4 tablespoon chives

Instructions

  1. Put the Instant Pot on Saute.
  2. Add the olive oil and the bacon. Cook the bacon for 7-8 minutes until brown, then remove and set aside for later.
  3. Cut and clean the leeks, slicing the white and light green parts into small pieces. Saute in the bacon grease in the pressure cooker for 5 minutes.
  4. Add the minced garlic and saute for 30 seconds.
  5. Turn the Instant Pot off, and add the potatoes, broth, salt and thyme.
  6. Put the lid on the Instant Pot and lock it. Press the Manual button and set the pressure cooker on High Pressure for 8 minutes.
  7. Once the Instant Pot reaches pressure and the cook time is completed let the pressure release naturally for about 10 minutes. Then manually release any remaining pressure.
  8. Remove the lid and either pour the soup into a blender to puree or use an immersion blender to puree it right in the pot.
  9. Stir the cream into the soup. Serve in bowls garnished with the reserved bacon, pepper and chives.
