Instant Pot Potato Soup

Delicious and creamy soup made in the pressure cooker.

Ingredients
- 1 tablespoon olive oil
- 4 slices Bacon
- 2 leeks
- 2 cloves garlic
- 3 cups yellow potatoes cubed
- 4 cups broth or water
- 1 teaspoon salt
- 1 teaspoon thyme
- 1/2 cup cream
- 4 tablespoon chives

Instructions
- Put the Instant Pot on Saute.
- Add the olive oil and the bacon. Cook the bacon for 7-8 minutes until brown, then remove and set aside for later.
- Cut and clean the leeks, slicing the white and light green parts into small pieces. Saute in the bacon grease in the pressure cooker for 5 minutes.
- Add the minced garlic and saute for 30 seconds.
- Turn the Instant Pot off, and add the potatoes, broth, salt and thyme.
- Put the lid on the Instant Pot and lock it. Press the Manual button and set the pressure cooker on High Pressure for 8 minutes.
- Once the Instant Pot reaches pressure and the cook time is completed let the pressure release naturally for about 10 minutes. Then manually release any remaining pressure.
- Remove the lid and either pour the soup into a blender to puree or use an immersion blender to puree it right in the pot.
- Stir the cream into the soup. Serve in bowls garnished with the reserved bacon, pepper and chives.
