Ingredients

  • 2 tablespoons olive oil
  • 1 cup chopped onion
  • 2 cloves garlic minced
  • 1 cup arborio rice
  • 2 cups vegetable broth
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup frozen peas
  • 2 tablespoons unsalted butter
  • 1/4 cup grated Parmesan cheese

  1. Set the Instant Pot to 'Sauté' mode and heat olive oil. Add onions and cook until soft, about 7-8 minutes, then add garlic and sauté for another minute.
  2. Cancel 'Sauté' mode. Add Arborio rice, vegetable broth, salt, and pepper to the pot. Secure the lid, set the valve to 'Seal', and cook on 'Pressure Cook' mode for 6 minutes.
  3. Once cooking is complete, perform a quick release of pressure. Stir in frozen peas, butter, and Parmesan cheese until well combined.
