Ingredients

  • 1 medium onion chopped
  • 1 green bell pepper seeded and chopped
  • 2 medium tomato chopped
  • 2 cups vegetable stock or chicken stock
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon adobo chili powder if you don't have this, you can use regular chili powder or omit
  • ½ jalapeno pepper seeded and diced, fresh
  • ⅓ cup salsa whatever type you prefer
  • 2 cups long grain rice uncooked
Optional garnishes for serving
  • Colby jack cheese shredded

  • Greek yogurt or sour cream

Notes

  • To make a chicken version, add chicken breasts directly to the Instant Pot and increase cook time to 7 minutes.
