Ingredients
- 1 medium onion, chopped
- 1 green pepper, seeded and chopped
- 2 medium tomatoes, chopped
- 2 cups vegetable or chicken stock
- 1 teaspoon garlic poder
- 1 teaspoon chili powder
- 1 teaspoon adobe chili powder, if you don't have this, you can use regular chili powder or omit
- ½ fresh jalapeño, seeded and diced
- ⅓ cup salsa, whatever type you prefer
- 2 cups uncooked long grain rice
Optional garnishes for serving
- Colby jack cheese shredded
