  2. Pour beef stock into the Instant Pot's inner pot. Place a trivet inside the pot.
  3. Place a trivet inside the Instant Pot, and arrange the seasoned steak strips on the trivet.
  4. Add sliced bell peppers and onions, then season with salt and freshly ground black pepper.
  5. Secure the lid, set the valve to 'Sealing', and cook on High Pressure for 3 minutes. When the timer goes off, do a quick release to avoid overcooking the steak.
  6. Serve by assembling the tortillas with the steak strips, bell peppers, and onions. Top with avocado slices and a squeeze of lime juice. Enjoy!

Notes

  • Place the steak in the freezer for 10 minutes. This will make it easier to cut into slices.
  • Slice the steak against the grain into thin strips. This helps break down the muscle fibers and ensures each bite is tender.
  • Tailor the heat to your preference by adjusting the amount of chili powder and adding a little cayenne to the seasoning or fresh jalapeños or hot sauce.
  • Don't overcook the steak. Overcooking can make the steak tough. Follow the recommended cooking times for tender results.
  • Vegetables need seasoning too. A pinch of salt and a dash of spices can elevate their flavor.
