Ingredients

  • 1 onion sliced
  • 4-5 cloves garlic
  • 2 sweet potatoes cubed
  • 4 carrots diced
  • 1 tsp salt
  • 1-2 tbsp green curry paste
  • 3.5 cups chicken stock/broth
  • 1 cup coconut milk

Instructions

  1. In the Instant Pot, layer in the onions, garlic, sweet potatoes, carrots, salt, green curry paste, and chicken stock. Close the lid and set the Instant Pot to Sealing and set the IP to pressure cook for 12 minutes.
  2. With an immersion blender, puree the soup to your desired consistently (or transfer to a blender to blend).
  3. Stir in the coconut milk and blend it together.
  4. Serve warm or chilled.
