Ingredients

  • 1 tablespoon olive oil
  • 1 medium size onion chopped
  • 4 cloves garlic chopped
  • 1 pound ground Italian sausage
  • 1 teaspoon salt
  • 1 teaspoon black pepper powder
  • 1 teaspoon crushed red pepper
  • 1 teaspoon Italian seasoning
  • 3 Russet potatoes peeled and cut into large cubes
  • 4 cups chicken broth
  • 1 cup half and half
  • 1 cup chopped kale

Instructions

    Cup of Yum
  1. Set the instant pot on the Saute function and let it heat up. Add olive oil.
  2. When the oil is hot, add the chopped onions and garlic and sauté it for a minute or two until the onion turns light brown.
  3. Add sausage and cook until the sausage is lightly browned.
  4. Add salt, black pepper, crushed red pepper, and Italian seasoning. Next, add potatoes and mix.
  5. Add chicken broth and close the lid and pressure valve. Select the Pressure Cook button on High Pressure and cook for 5 minutes.
  6. Once the pressure-cooking cycle is over, quickly release the pressure by manually moving the valve from the Sealing to the Venting position.
  7. Open the lid carefully and select the Cancel button.
  8. Select the Saute button.
  9. Add chopped kale and let the broth bubble up for a few minutes. Add half and half and mix.
  10. Cancel the Saute button.

Notes

  • Try to cut the potatoes into equally sized cubes so they cook evenly.
  • If you prefer a thicker, creamier soup, add more half-and-half or even a splash of heavy cream.
  • While I've provided measurements for the salt, pepper, chili flakes, and Italian seasoning, remember that everyone is different. Taste the soup and adjust the seasoning to your liking.
  • I love spicy sausage in this recipe but feel free to use mild.
