  • 4 Granny Smith apples (peeled, cored, and grated)
  • 2/3 cup (5oz/142g) granulated sugar
  • 2 tablespoons water
  • ¼ teaspoon cream of tartar
  • 3 large egg yolks (room temperature)
  • 1/3 cup (2 ½ oz/71g) granulated sugar
  • 1 tablespoon lemon juice
