- 4 Granny Smith apples (peeled, cored, and grated)
- 2/3 cup (5oz/142g) granulated sugar
- 2 tablespoons water
- ¼ teaspoon cream of tartar
- 3 large egg yolks (room temperature)
- 1/3 cup (2 ½ oz/71g) granulated sugar
- 1 tablespoon lemon juice
