Irish Coffee Muffins
These Irish Coffee Muffins combine coffee and Irish whiskey into a moist, tender muffin with a lightly sweetened crumb. The blend of sour cream and coffee in the batter contributes to a rich texture and depth of flavor, making them suitable for a special breakfast or brunch treat. Baking for 20 minutes yields around 18-20 muffins, which have a slightly dense and moist crumb thanks to the sour cream.
Ingredients
- 2 1/2 cup flour
- 1 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sugar
- 1 cup coffee
- 2 egg
- 1 cup sour cream
- 4 Tablespoon Irish whiskey
Instructions
- Make a cup of coffee and put it aside to cool for 10-15 minutes.
- Preheat the oven to 400.
- Mix all the dry ingredients (flour, baking powder, baking soda, salt and sugar) in a bowl and stir well.
- Mix all the wet ingredients (coffee, eggs, sour cream, whiskey) in another bowl and stir well.
- Make a well in the dry ingredients and quickly add the wet ingredients and stir to mix quickly.
- Put the batter into muffin cups and bake for 20 minutes. Makes 18-20 Muffins.
