Irish Nachos

Crispy kettle-cooked potato chips are garnished with fried corned beef and loaded with beer cheese sauce, green onions, black olives and diced tomatoes.

Ingredients

  • one batch beer cheese sauce
  • 300 grams potato chips plain salted, kettle-cooked
  • 175 grams cooked corned beef deli-style shaved
  • ⅓ cup diced green onions
  • one large tomato diced and drained well
  • ½ cup sliced black olives drained well

Instructions

  1. Get out a large serving platter and place the potato chips in a pile on the platter.
  2. Prepare the cheese sauce and keep it warm.
  3. Chop the corned beef into smaller strips or pieces.
  4. In a frying pan over medium heat, quickly fry the corned beef until heated through, and crisped up in places.
  5. Sprinkle the corned beef on top of the plated chips in an even layer. .
  6. Drizzle a cup of the cheese sauce on top. Pour the remaining cheese sauce into smaller personal bowls for dipping.
  7. Top with green onions, diced tomato,and black olives.
  8. Serve immediately.

Notes

  • calories are without the cheese sauce, as amounts will differ when drizzled on top
