Irish potato pancakes

These simple Irish potato pancakes are the ultimate, easy breakfast recipe but will be an equally delicious appetizer served with sour cream.

Ingredients

  • 1 cup potato cooled, mashed
  • 1 cup potato grated
  • 1½ cups flour
  • 1 tsp baking powder
  • 1 cup buttermilk
  • 1 cup whole milk full cream
  • ½ cup spring onions finely chopped, or green onions
  • ½ cup cheddar cheese grated
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Combine all the ingredients in a large mixing bowl and mix until the batter is thick and creamy.
  2. Heat a large, nonstick frying pan over medium-high heat and add a teaspoon of oil.
  3. Cook spoonfuls of the batter for 5-7 minutes per side until golden, crisp and cooked through.
  4. Place cooked pancakes on a sheetpan/roasting tray and place in a warm oven while you cook the remaining batter.
  5. Serve warm with sides of your choice.
