Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons butter
  • 1 large egg beaten
  • 1/2 cup milk
  • 1/4 cup plain yorgurt
  • 1/2 cup raisins optional

  1. Preheat oven to 375°F (190°C), and line a flat baking pan with parchment paper.
  2. In a medium mixing bowl stir together flour, baking powder, soda, and salt.
  3. Cut in butter until the mixture resembles coarse crumbs.
  4. Make a well in the center of the mixture.
  5. In a small mixing bowl combine egg white and milk and yogurt.
  6. Add all at once to dry the mixture and include the raisins which are optional. Stir just till moistened.
  7. On a lightly floured surface knead dough 12 to 14 strokes till the dough is nearly smooth.
  8. Shape the dough into a 7-inch round loaf.
  9. Place soda bread dough on a lightly greased baking pan and score the top with a sharp knife, making 2 slashes to form an X.
  10. Bake for about 25-30 minutes or till golden.
  11. Remove from the oven and Serve warm.
