Irresistibly Easy Pumpkin Cobbler Recipe

Ingredients

  • ½ c melted butter
Cobbler Layer:
  • 1 cup sugar
  • 1 cup flour
  • 4 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
Pumpkin Filling:
  • 3 cups pumpkin puree
  • 1 cup evaporated milk
  • 2 eggs
  • 1 cup sugar
  • ⅔ cup brown sugar
  • 1 tbsp flour
  • 2 tsp pumpkin pie spice
Topping:
  • 4 tbsp butter cubed
  • ¼ cup Sugar for sprinkling
Drizzle:
  • 1 cup powdered sugar
  • 3 tbsp milk
  • ½ tsp vanilla extract
  • 7 oz container marshmallow cream

Instructions

  1. Preheat oven to 350° F.
  2. Melt the butter and place it in the bottom of a 13x9 pan or similar size.
  3. To make the cobbler, stir the flour, sugar, salt, milk, and baking powder together in a medium bowl.
  4. Pour the mixture into the pan with melted butter.
  5. To make the filling, whisk together the evaporated milk, pumpkin puree, sugar, brown sugar, eggs, pumpkin spice, and flour.
  6. Pour the pumpkin mixture into the pan. Spread the wet ingredients evenly.
  7. Cut cold butter into cubes and then spread it over the top.
  8. Sprinkle a little sugar over the top. 
  9. Place in the preheated oven and bake for about 50 - 60 minutes, or until the edges are brown and the middle is set.
  10. Remove the baked cobbler from the oven and allow it to cool.
  11. To make the drizzle, combine the milk, powdered sugar, vanilla, and marshmallow cream in a separate bowl.
  12. Once you’re ready to serve the cobbler, just drizzle the mixture over each serving.
  13. Enjoy!

Notes

  • Test the Spice: Better taste your filling as soon as you add the pumpkin spice to make sure it’s not overpowering the pumpkin flavor of your dessert.
  • Let It Rest: Allowing the cobbler to cool for about 20 minutes before serving will keep it from being too runny as it will give the filling enough time to set.
  • Balance the Sweetness: If you find your filling or topping to taste a bit too sweet for your liking, just add a pinch of salt to balance it out.
