Ingredients
- 2 cups diced avocados, about 2 large avocados
- 2 cups sliced English cucumber, about 1 medium cucumber
- 2 ½ cups diced Roma tomatoes, about 3 medium tomatoes
- ¼ cup sliced red onion
- ½ cup small mozzarella cheese pearls
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon Italian seasoning
- Salt, to taste
- ground black pepper, to taste
Instructions
- Add 2 cups diced avocados, 2 cups sliced English cucumber, 2 ½ cups diced Roma tomatoes, ¼ cup sliced red onion, and ½ cup small mozzarella cheese pearls to a large bowl and gently toss to combine.
- In a small bowl whisk 2 tablespoons extra virgin olive oil, 2 tablespoons fresh lemon juice, and 1 tablespoon Italian Seasoning. Pour the dressing over the vegetables and toss to coat.
- Add salt,and ground black pepper, to taste and serve.
