Ingredients

  • 2 cups diced avocados, about 2 large avocados
  • 2 cups sliced English cucumber, about 1 medium cucumber
  • 2 ½ cups diced Roma tomatoes, about 3 medium tomatoes
  • ¼ cup sliced red onion
  • ½ cup small mozzarella cheese pearls
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Italian seasoning
  • Salt, to taste
  • ground black pepper, to taste

Instructions

  1. Add 2 cups diced avocados, 2 cups sliced English cucumber, 2 ½ cups diced Roma tomatoes, ¼ cup sliced red onion, and ½ cup small mozzarella cheese pearls to a large bowl and gently toss to combine.
  2. In a small bowl whisk 2 tablespoons extra virgin olive oil, 2 tablespoons fresh lemon juice, and 1 tablespoon Italian Seasoning. Pour the dressing over the vegetables and toss to coat.
  3. Add salt,and ground black pepper, to taste and serve.
