Italian Chicken and Stuffing Bake

Ingredients
- 1 can (14 ounces) diced tomatoes undrained
- 1 box (6 ounces) Stove Top Chicken Stuffing Mix
- 1/2 cup water
- 2 cloves garlic minced
- 1 ½ lbs. boneless skinless chicken breasts cut into bite-size pieces
- 1/3 cup basil pesto
- 1 cup shredded Mozzarella cheese
Instructions
- Preheat oven to 375° F. Grease a 9x13-inch baking dish with non-stick spray.
- In a large bowl, combine diced tomatoes, stuffing mix, water and garlic. Stir together until stuffing is moistened.
- Lay the chicken pieces in a single layer in the prepared baking pan. Spread the basil pesto over the top of chicken pieces. Sprinkle the cheese evenly over the chicken. Top evenly with the stuffing mixture.
- Cover and bake for 30 minutes or until chicken is cooked through. Serve and enjoy!
